This is a simple, no-cook pasta sauce. Fresh tomatoes are the star here, so be sure you’re using ripe, juicy ones. This recipe is uber flexible—make it with any kind of tomato, such as plum, grape, cherry, or funky-shaped heirloom ones. You should have 3 cups chopped of whatever you choose.
Toppings (optional): balsamic vinegar reduction, basil leaves
- In a large pot, cook pasta according to directions. Drain.
- Meanwhile, place chicken in Multipurpose Steamer. Cover and microwave on high 4–5 min or until cooked through. Drain excess liquid, then break up chunks with Ground Meat Separator.
- Chop tomatoes. Remove cores, if desired.
- Add tomatoes, vinegar, sauce mix, oil, and cooked chicken to pot; toss with pasta. Stir in cheese. Add toppings, if desired.
This is a perfectly balanced plate.
